Makes 10 pancakes
Hey everyone! Let me introduce you to my new favourite breakfast recipe - American style banana pancakes topped with crème fraîche, blueberries, strawberries and maple syrup. This is peeerrrfect for a weekend brunch whether it's just you or you've got people round!
Now, the trick to get the pancakes super fluffy is as follows. Sieve 350g of self raising flour into a bowl, along with 1tsp of baking powder and a pinch of salt. In a separate mixing bowl, mash two very ripe bananas whisk two medium sized eggs with 250ml of semi-skimmed milk and 1 tsp of vanilla extract. Whisk all of these wet ingredients together. In the dry bowl, make a well in the centre, pour the wet ingredients into the middle, and whisk all the ingredients together to make a smooth thick batter.
Heat a knob of butter in a frying pan on a medium heat. Pour 2-3 tbsp of batter into the pan, making sure it doesn't spread too wide, and let this fry for a few minutes. You will see small bubbles appearing on the top which shows the pancake is cooking through. Flip the pancake and cook the other side for a couple of minutes. As these are thick pancakes you may need to do a quick check with a knife to make sure the inside is cooked through.
TOP TIP: the more pancakes you make the hotter the pan will get so they will need slightly less time either side as you go through. You don't want the heat too high otherwise you'll burn the bottom of the pancake and it won't cook all the way through so try and keep them on a medium heat. The butter is a good indicator of whether the pan is too hot - if it's turning dark brown it's burning.
Whilst I'm making my way through the batter I wrap the cooked pancakes in foil and keep them warm in the oven on a low heat (about 60C) so that they don't dry out.
TOP TIP: if you don't want to use all the batter straight away, cover with cling film and keep in fridge for the next day.
Once your pancakes are ready, stack 3 onto a plate, dollop on some crème fraîche, top with a handful of blueberries, sliced strawberries, and drizzle with maple syrup. If you want it to look REALLY good, sieve some icing sugar on the top and you've got yourself a yum breakfast!
