Blooming beverages šŸŒ¾

This is the start of my home-brewed beverages journey and what a way to kick it off than with hand-picked elderflowers for fresh elderflower cordial!


You can get fresh elderflower blossom from some shops (mostly independent organic grocers) or dried elderflowers from Amazon.


For this cordial you need 15 elderflower heads. Wash them well.


Put 500g of caster sugar and 4 tbsps of runny honey in a saucepan.


Measure out 1 litre of water and add to the saucepan.


Bring the mixture to the boil and simmer until all the sugar has dissolved.


Remove from heat.


Finely grate in zest from 2 lemons and add the elderflower heads, so that the heads are completely submerged and the stalks are sticking up.


Squeeze in the juice from 1 of the lemons, and slice the other adding it to the pan.


Pop the lid on and leave the mixture to infuse for 24 hours.


When youā€™re ready to strain your cordial, line a sieve with a kitchen tea towel or some muslin and pour through into a large bowl.


Transfer the cordial to glass swing-top bottles and store in fridge.


This will last for 3-4 weeks.


You can drink the cordial with water, prosecco, lemonade- anything you like!
