You had me at pancakes

Sunday morning is for snazzy breakfasts…. I got this gorgeous choccie chip gluten free pancakes inspiration from Deliciously Ella.


Makes 10 pancakes:

Mix the following ingredients together in a large mixing bowl:

450ml almond milk

50g gluten free oats

300g gluten free flour

100g chocolate chips

1 tbsp of melted coconut oil (plus more to heat in the pan)

1 tsp of baking powder

2tbsps of maple syrup (plus more to drizzle on the top)


Warm some coconut oil in a pan and spoon a large ladle of pancake mixture into the pan.


I found this recipe to work well in a scotch pancake style so I used a spatula to keep a small thick round shape to the pancake.


Cook each side for 3-4 minutes (or until each side is a lovely golden colour).


As this is a thick mixture make sure the middle is cooked by doing the skewer test.


Drizzle some maple syrup on the top and they’re ready to eat!


These pancakes could also work well if adding bananas (also because I love any banana sweet treat).
